Uncertain. Probably from Proto-Indo-European *bʰreuwh₁-ró-m ‘brewing, brewed drink’, a deverbal noun from *bʰrewh₁- ‘to boil, brew’, with Proto-Germanic *beurą arising by dissimilation from earlier **breurą. Less likely is the reconstruction **beuzą, usually derived with PIE *bʰéus-o-m ‘yeast, dregs, ferment’, since both the semantics and the morphological pathway are less straightforward. (Kroonen 2013) makes a strong argument against **beuzą, since the -z- would cause ʀ-umlaut in Old Norse, giving **býr; compare Proto-Germanic *deuzaz > ON dýr (expected outcome with -z-) and *flōraz > ON flórr (expected outcome with -r-).
